イオンスーパーセンター湯沢店の一角には、生産者が自由に売り場をつくることができる、「虹こまち」という店舗があります。本来ならば出店者の私から提案しなければいけないところ、担当の鈴木さんからはいつも新しい提案をいただいています。
今回も提案をしていただき、期間限定で“食べる調味料”の新しいプレゼンテーションをしたいというお話でした。ヤマモでは肉味噌でやってみてはどうか、とのことでした。そのなかで鈴木さんが出した条件がひとつ。
「商品案内は懐かしさを感じられるものでお願いします。」
それは、お客様に売り場で他の商品とのバランスを取るためのもの、という彼の配慮からでした。僕の提案がどれだけ受け入れられるかは分かりませんが、こういった条件の元でする仕事は、実に遣り甲斐のあるものです。
明日、10日から販売が始まります。イオンスーパーセンター湯沢店「虹こまち」にお越しの際は、地元の希有な商品たちに目を向けて欲しいと思います。

Information of sales in specially-installed corner of Nijikomachi in aeon super-center Yuzawa

I always get the talk of sales from Mr. Suzuki of Nijikomachi of the producer subject located in the corner of the aeon supercenter Yuzawa. Because I am a producer, I should propose selling. He always makes a new proposal though he is a seller.
This request is one in that. It was a content that it wanted to do presentation with new seasoning at limited time. I hear that it wanted our company to propose the meat miso. Mr. Suzuki gave one condition.
“Product information is made the one that nostalgia is felt. “
The reason to other commodities and to have differentiated as for the commodity of Yamamo. How much my proposal is accepted is not understood. However, I feel happiness in work as for depending of me by such details.
When coming to Nijikomachi of the aeon supercenter Yuzawa, I want you to see an unusual commodity of local.

すべて国産原料を使い、無添加、手づくりで仕上げました。熟成三年のコクを“そのままごはん”でお試しください。また、炒め物に加えていただくと本格的な味に仕上がります。ネギ、ショウガ、にんにくなどの薬味を加えますと、さらにおいしくいただけます。

明日配布される秋田県南地域フリーペーパー『どあっぷ』9月号に“ゴヨウキキ茂助・カフェ*”の記事が掲載されます。若干緊張しましたが、丁寧に取材していただき、開店前にひと安心したのを覚えています。私は広告やメディアの類のものには詳しくありませんが、初めてのイヴェントが第三者の目で捉えられ、形として残ることは、主催者として大変嬉しく思います。雑誌を手に取る機会があれば、皆様に見ていただきたいと思います。

Tomorrow’s regional Akita Prefecture south free paper ‘Doappu’ The September edition will be distributed. The article on “Cafe” was published in it. Because they covered politely, I remember having been relieved. I am not well informed about the kind of one of the advertisement and media. I think catching of the first event by third party’s eyes, and the remainder as shape to be a very glad as an organizer. I would like everybody to see if there is a chance to take the magazine.

メールで来た記事の校正をしました。味噌醤油屋であることを弁えつつも、新たな試みで皆様とお会いできる日を楽しみにしております。
The proofreading of the article has gone up by mail. I am looking forward to continuing the miso soy sauce shop of the profession and meeting everybody.

お盆前の忙しさで、思わず自分の生活まで急ぎすぎてしまいます。無造作に置かれた供え物に目をやると、不思議と平静さを取り戻せました。
A hot as usual day continues. I took a rest while seeing the offering thing. Though it is busy before the vacation.

仕込味噌とは、炊き上げた大豆と米糀、塩を混ぜ合わせたものです。ヤマモの蔵の中でじっくりと熟成させるのを待たずに皆様のご家庭で熟成させていくという、言わば半人前のお味噌です。若いお味噌から、完熟したお味噌、老ねてコクの出たお味噌まで、お好みの熟成度合いで楽しむことができます。お好みの熟成段階で冷蔵庫に入れていただければ、長くその状態で食べることもできます。
かつてはお客様に大安にお届けするという、大変めでたい食べ物でもありました。昔ながらの製法でコツコツ作ったお味噌です。自分だけの“おうち”の味を試してみませんか？

おいしくするコツ。
仕込味噌の２割の重石をすると、塩分がお味噌の中をまわり、均一な発酵になります。また、お盆明けに一度お味噌の上下を混ぜ合わせると空気が入り、菌が活性化しておいしいお味噌になります。その際の水分（たまり）は旨味成分が凝縮されています。そのまま混ぜ合わせてください。その後の重石は必要ありません。冷暗所にて発酵、熟成をしてください。若い味噌をお好みの方は秋口から食べ始められます。春までじっくり一年も、また、おいしくいただけます。

お買いもの、の目安。
年間の味噌使用量はおよそ５kgです。８～１０kgで２人分、１８～２０kgで３、４人分とお考え下さい。塩分は１０％で一般のものよりも低く糀がたっぷりと入った米どころのお味噌に仕上がります。
８kg入りのタルは直径３０cm、高さ２５cm。１８kg入りのタルは直径３７cm、高さ３０cmです。
１kgあたり３８０円とお求めやすくなっております。

タル入りとダンボール入りについて。
はじめての方は、タル入りがオススメ。置くだけそのままできあがり！入れ物をお持ちの方は、ダンボール入りをどうぞ！野菜を入れてお漬物にも◎。

Information of sales of “SHIKOMIMISO”（semifinished miso）

“SHIKOMIMISO” is mixed what as for boiled soybean, Kouji, and salt. It is a miso of the half presence of others so to speak. In the miso from a young miso from which the miso and the old flavor that ripens into full maturity are served, it is possible to enjoy it by the ripe degree of the favorite. If it is possible to put it in the refrigerator in the ripeness stage of the favorite, it is possible to eat long in the state.
It was very happy food that was delivered to Daian and said to the customer then before. It is a miso made by a manufacturing method from of old by using a domestic raw material. Will you test one’s own taste?

【To make it to delicious. 】
If it trains and a heavy stone of 20 percent of miso is done, salinity turns in the miso, and it becomes uniform fermentation. Moreover, if the top and bottom of the miso is mixed with the Bon Festival dawning once, air enters, the bacterium is activated, and it becomes a delicious miso. As for the moisture in that case, the profit element has been condensed. Please mix it as it is. A heavy stone afterwards is not necessary.

【Standard of purchase. 】
The amount of the miso use during year is about 5kg. The salinity of the miso is 10-11%. This is lower, and healthier than a general miso.
Taru of entering by 8kg is 30cm in the diameter, and 25cm in height. Taru of entering by 18kg is 37cm in the diameter, and 30cm in height.

回を重ねる毎に、スタッフやお客様との距離を近く近く感じております。今回も楽しく、有意義な時間を過ごすことができました。完売した商品もあり、大変嬉しく思います。また、来年の出店のお話もいただくことができ、次回に向けて良いサーヴィスができるよう、早くも想いを巡らせております。

Whenever times are piled up, I feel familiarity in the staff and the customer. I was able to spend it happy this time, and significantly. I am very glad there to be a commodity sold all. I was able to get the talk of next year’s branch shop. To do good service aiming at next time, I think about that since now.
Hereafter, I introduce the 7th appearance.

今回から入り口で“マイお猪口”をいただいて試飲をするようになったそうです。サイズ感が可愛らしいです。
This lovely “Small sake cup” is gotten at the entrance, and it seems to have come to sample it in that.

お猪口と案内の用紙を片手に廻る方が見受けられました。
The person who walked to one hand in the form of the small sake cup and the guide was able to see me.

丸十酒店さんにJA神奈川の見事な胡瓜を手配していただき、そちらで試食を行いました。
MARUJU LIQUOR INC. arranged a splendid cucumber of JA Kanagawa, and it sampled it in that.

今年も去年に引き続き、彼ら2人に元気ある接客をしてもらいました。
They did serving that was energetically as well as last year.

大学時代の友人、行待さんの京都・竹野酒造の日本酒です。
These are the sake of the Takeno brewing of Kyoto. Mr. Yukimachi who is the friend of the university is managing it.

いよいよ杜氏になられたそうで、飄々とした彼のつくるお酒は今後も気になるところです。
Mr. Yukimachi seems to have been become a sake brewer. In the future, the sake that dignified man makes is anxious.

田中さんには、毎回おいしい日本酒を紹介してもらっています。例年オススメの上喜元、金賞受賞おめでとうございます。
It introduces every time recommended sake to Ms. Tanaka for me. Jyoukigen took the gold prize. Congratulations.

行待さん、田中さんをはじめ、友人やスタッフの方々も遊びに来てくれます。いつもありがとうございます。

途切れることなく試食が続き、荒さんにも手伝っていただきました。本当に助かりました。
