透き通る米と、笑顔。
「こしき」という機械で、
700kgを越す米を蒸しあげる。
それこそ何度も繰り返している作業だが、
蒸上がりを均一にするのが難しい。
蒸気で次第に透き通っていく米に
浸漬した米を次々と投入していく。
そのタイミングや量の加減を、
状況に応じて変えていくことは
まさしく職人技と思う。
だからこそ、ふっくらと蒸しあがった後に、
互いにふと見合わせる笑顔が忘れられない仕事だ。

Rice that exceeds 700kg is steamed up with the machine “Steaming basket”.

Rice with which it soaks it in the rice gradually transparent because of steam is turned on one after another.
It is craftsmanship to change the addition and subtraction of the timing and the amount according to the situation.
Therefore, after steaming rice, the smile to which we are relieved is impressive work.

働き者の燻銀。
ヤマモで最も頻繁に使われる醸造機械が、この濾過機だ。
12枚の濾過板を取り付け、じっくりとハンドルで閉めた後、
いよいよ濾過本番となる。
何十年も濾過を続けた結果、現在の風合いになったことに、
僕はひと際、愛着と感謝を覚える。
燻銀とは、まさしく彼のような働き者が醸し出せるものなのだろう。

仕込蔵の巨人。
NK缶は原料を洗ったり、浸漬したり、
煮たり、蒸したりする醸造機械だ。
様々な醸造機械の中でも、
まるで巨人のように、
無骨でどっしりと構える様が印象的だ。
かつて、この巨人を使いこなせるようになることが、
自分の目標でもあった。
今ではこの巨人を従え、より良いものをつくりたいと思う。

The “NK Can” is a brewing machine that washes, soaks, boils, and steams the raw　material.
The “NK Can” is giantlike large in a variety of brewing machines.
Came to being able to master this giant was my target before.
I want to make the better one by handling this giant.

感性のままに。
三関小学校三年生のみんなから、
お礼の手紙が届いた。
それぞれの文章もさることながら、
思い思いに色付けた枠組みからも
彼らの自由な感性が受け取れた。
僕たちは、
味と匂いの部分でしか
教えられることはないけれど、
見ることも、聴くことも、触ることも、
自分の感性のまま、大人になって欲しいな。

まっすぐ見つめる。
いつもより早めの雪景色。
ヤマモに5人の小学生が来た。
紙にぎっしり質問を携えて、次々に投げかける。
「えっ！」と驚くような鋭い質問もあり、
思わず感心してしまった。。。
純粋でまっすぐ見つめる彼らに、
正直なモノづくりで応えたいと、改めて思った。
