    “With COVID-19″時代における芸術文化と科学の価値
    弊社ヤマモが行うアート活動“I.L.A.(Industry Loves Art 産業は芸術に恋をする)”の中でも、デトロイトやベルリンをはじめ、社会の危機的な状況を縫合するのが芸術であると定義しております。現在進行形である新型ウィルスによる脅威と人類との闘いは、個に分散しながら生命活動を維持し、生活を長期にわたり続けていくことです。そのような状況下で人間的な生活を送るためには芸術文化が必要となり、その価値はこれまで以上に高まります。また、個々人が新型ウィルスや衛生に正しい知識を持って対応をしていくことから、科学の重要性が社会の中で増していくことも明らかです。私たちは、芸術文化と科学を混ぜ合わせた新しい産業の在り方を模索していきたいと考えています。

    ヤマモが行う新たな取り組み
    私が家業を継いでから研究してきた新しい菌の特性の発見や味噌醤油の進化についても、科学的、学術的な追求をしながらも、夢や物語を読み込んでいくような人間らしい芸術文化の追求を行いたいと考えるようになりました。無限に広がる菌の世界は、天空にある宇宙や新しい惑星の発見にも似た夢や物語の世界が存在しています。さらに地中深くに広がる多くの鉱物や、新しい宝石の発見も、同様の世界観を持ち合わせています。これらをネーミングし、研究や活動名、菌の命名に繋げていきたいと考えました。
    これまで行った未来型の研究やそのチーム名、さらに製品群名を古代の宇宙を意味する”ASTRONOMICA(アストロノミカ)”とし、特許微生物として出願した酵母菌の名前を星と鉱物を合わせた造語”Viamver(ヴィアンヴァー)”と命名しました。これらを商標出願したことを機に、プロジェクトを公開したいと思います。私たちは今後、更なる研究と製品やサーヴィス化に取り組んで参ります。これからも伝統産業の側面から、健康で文化的な夢ある世界の追求を続けていきたいと思います。

    ヤマモが位置する岩崎地域の最も古い社に星の女神である妙見菩薩の信仰があり、その社のある森を切り拓いて築城したことから、初代の城主に星の信仰があったと考えます。また、この菌が醸成する旨味成分の由来が地中の鉱物から発見されたことに着想を得て、星と鉱物の名前を結び”Viamver”と命名しました。
    華やかな香りと旨味を活かし、革新的な味噌醤油だけではなく、肉質改善やマスキング効果からジビエ料理、アルコール生成能力からナチュラルワインへの応用を研究しています。
