平成２4年度のヤマモの年末年始のお休みは、１２月３１日（土）から１月５日（木）までとなっております。（年末の１２月３０日（金）まで営業しており、１月６日（金）から営業開始です。）運送会社の諸事情で年内の一升ビンの発送は１９日で締め切らせていただきます。（ペットボトルは29日まで発送しております。）また、商品の発送が大変込み合っており、注文から発送までお時間をいただく場合がございます。ご了承ください。

Information at vacation of 2012 year end and new year

The rest of Yamamo in 2012 at year end and new year is up to December 30 (Sun), January 4 (Fri). (It does business until December 29 (Sat) in the end of the year, and beginning of business on January 5 (Sat). ) Sending out 1.8L bottle within the year is up to every affection of the carrying company the 19th. (The PET bottle is sent out until the 29th. )Moreover, the product launch might be very crowded, and I get time from the order to sending out. Please acknowledge it.

2012年度，年末年初休息的告知 

冷却した煮大豆を潰し、塩切り（塩で糀菌を抑える）した糀を合わせて混合していく。その際に酵母と乳酸菌の入った種水を加え、味噌の適切な水分量に仕込む。味噌の中で塩分と水分の対流を起こすため、中に空気が入らないように力を込めて丁寧に丁寧に味噌を押していく。

The cooled soybeans are now mashed and mixed with salted rice malt (salt retards malt’s activity). Fermenting agents and water are also mixed into the soybeans. Meisters then carefully add pressure to the mixture by hand, in order to rid it of air and thereby create an even blend of salt and water.

將煮好的大豆冷卻過後搗碎，並混入以鹽份調整過後的麹菌。同時，注入含有酵母及乳酸菌的種菌水，以賦予味噌適量的水份。為了使空氣不跑進味噌當中而妨礙鹽份與水份在味噌中的對流，必須小心謹慎地不斷大力按壓揉捏。
