平成２4年度のヤマモの年末年始のお休みは、１２月３１日（土）から１月５日（木）までとなっております。（年末の１２月３０日（金）まで営業しており、１月６日（金）から営業開始です。）運送会社の諸事情で年内の一升ビンの発送は１９日で締め切らせていただきます。（ペットボトルは29日まで発送しております。）また、商品の発送が大変込み合っており、注文から発送までお時間をいただく場合がございます。ご了承ください。

2012年度的yamamo的年末年初的晚安，从12月31日(星期六)到1月5日成为（星期四）。是到(连)（年末的12月30日(星期五）营业着，1月6日从（星期五）营业开始。)以运输公司的诸事情年内的一升瓶的发送请19日让我届满。（塑料瓶到29日发送着。）还有，商品的发送非常拥挤，有从订购到发送领受时间的情况。请谅解。

冷却した煮大豆を潰し、塩切り（塩で糀菌を抑える）した糀を合わせて混合していく。その際に酵母と乳酸菌の入った種水を加え、味噌の適切な水分量に仕込む。味噌の中で塩分と水分の対流を起こすため、中に空気が入らないように力を込めて丁寧に丁寧に味噌を押していく。

將煮好的大豆冷卻過後搗碎，並混入以鹽份調整過後的麹菌。同時，注入含有酵母及乳酸菌的種菌水，以賦予味噌適量的水份。為了使空氣不跑進味噌當中而妨礙鹽份與水份在味噌中的對流，必須小心謹慎地不斷大力按壓揉捏。
