    雪国・秋田の四季と共に、ヤマモの味噌は諸味蔵で丸一年、醗酵と熟成を経験する。これが、低温経過を辿る醸造、「秋田の天然醸造＝ヤマモの七つの蔵の醸造」である。醗酵の一番盛んになる夏の盆過ぎに、味噌を一度掘り起こし、酸素を入れて更に醗酵を促す。この“天地返し”の後に秋冬を迎え、緩やかな醗酵へと進んでいく。そして、いよいよ雪解けの春、ヤマモの味噌は食べ頃を迎えるのである。

    Fermentation and maturity

    The miso reaches maturity after fermenting in a cellar for one year. This process is called Natural Brewing. In summer, when its fermentation agent is most active, miso is stirred to further agitate its process with oxygen. Fermentation slows down during fall through winter. Then it is mature and seasoned in spring.

    隨著雪鄉秋田的四季更迭，味噌就安放在大木桶中等待為期一年的發酵及熟成。這正是純天然的釀造手法。特別是發酵最為蓬勃的夏季盂蘭盆節過後，會一度將味噌挖出，翻攪，使氧氣進入以促進發酵。在此稱為「天地翻轉」的步驟結束後，時序即將邁入秋冬，進入和緩的發酵過程。當冬雪初融的春天來臨，也終於盼到了可以品嚐的時刻。

    意志、からだ、遺伝子。
    蔵の箪笥に眠る、厚手のウール地、黒色のオーヴァーコート。
    ずっしりと深く沈み、肩に重みのかかるコート。 
    雪深いときに、タイムトリップしたコートは、興味を引いた。

    Will, the body, a gene. 
    The black overcoat of the thick wool yarn place suited the wardrobe of the warehouse. 
    Especially this coat feels heaviness for the shoulder. 
    I got interested in the coat of these primitive ages this winter. 

    第四代的大衣

    意志，身體，基因。

    仓库的衣橱有厚的羊毛地的?色的大衣。
    這個大衣感到重。 
    此次的冬天，我到這個太古的大衣有了興趣。

    さっそく羽織ると、袖も丈も収まりがよかった。
    自分と同じサイズの持ち主と、その由縁に心奪われる。
    このルーツを探るべく、背景を訊いて廻った。
    When I put on the coat instantly, a sleeve and length had the good settlement. 
    Since size was the same as me, I got interested in that connection with this owner. 
    I asked many persons the talk in order to explore this root. 
    我立刻披上大衣的話，袖子和長度安穩都好。
    因為我和尺寸一樣，我與這個持有者，對那個緣故緣有了興趣。
    我為了摸索這個始祖，詢問了很多的人話。 
     
    これは、どうやら四代目・高橋茂助、彦四郎のものらしい。
    四代目の彼は、二十歳でハットにステッキを持ち、明治の写真に写る。
    現役時代には、岩崎町長を務め上げ、功績を残したと云う。

    このオーヴァーコートは、特別にあつらえたものだった。

    Probably this coat belongs to Hikoshiro, the 4th generation of Mosuke Takahashi. 
    He of the 4th generation was covered with the hat, had a cane, and was in the photograph of Meiji at the age of 20. 
    He serves as the mayor of Iwasaki and says that he left many distinguished services. 
    His later years of this overcoat were special. 
    這個大衣，是恐怕第四代的高橋茂助，彥四郎的東西。
    第四代的他，戴上帽子，拿手杖，以二十歲明治的照片顯現著。
    據說他，擔任岩崎的鎮長，剩下了很多的功績。
    這個大衣，他的晚年特別。

    あたたかさを保つ、四代目のオーヴァーコート。
    僕はこのコートを羽織り、外へと駆け廻る、平成の大雪。
    むかしもいまも、降っては降っては、ずんずん積もる。
    The overcoat of the 4th generation of Mosuke Takahashi maintains warmth.

    ―それは、１８６７年創業ヤマモ味噌醤油醸造元、初代・高橋茂助が醸造業を立ち上げる以前の物語。皆瀬川の橋の袂、岩崎では物流が常に盛んであった。ここでは調味料や生鮮食品をはじめとする生活の食料品から、当時贅沢品とされる酒、タバコの嗜好品に至るまでを網羅し、幕末の激動の時代に商人として時代を生き抜こうとした“御用聞き”が存在した。この“御用聞き”こそがヤマモ味噌醤油醸造元の前身である。
    かつての記憶を呼び起こし、醸造に従事しながらも、現代にも重宝する“ゴヨウキキ”として皆様のお役に立ちたいと考えております。私共が特別に選んだ商品をわずかながらご紹介していきます。味噌、醤油共々、どうぞよろしくお願いします。

    Information of Goyoukiki Mosuke Select Shop opening

    ―This story is, before Mosuke Takahashi, the founder of Yamamo Miso and Soy Sauce Brewing Company start brewing industry in 1867. Iwasaki of the town with the bridge built over Minase river was always prosperous in the physical distribution. Here, the luxury goods of the alcohol used as a luxury those days and tobacco were circulating from the food of the lives including a seasoning or a perishable food. The “order taker” who tried to survive a time as a merchant existed in the tumultuous time of the end of Edo Period. This “order taker” is the past of amamo Miso and Soy Sauce Brewing Company. 
    We continue brewing. I think that we would like to be helpful as present-day “Goyoukiki” in addition. We introduce specially selected goods. I would appreciate your favor. GMSS

    ―這個故事是1867年，Yamamo味噌醤油釀造商的第一代傳人・高橋茂助啟動釀造業以前。有皆瀬川架起的橋的街的岩崎物流經常繁盛。由在這裡以調料和新鮮食品為首的生活的食品，當時被認為是鋪張品酒，香煙的嗜好品流通著。在幕府的末期的動盪的時代作為商人在時代打算活下去的”推銷員”存在了。正是這個”推銷員”Yamamo味噌醤油釀造商的前身。
    我們持續釀造。還有我們想作為現代的”推銷員”對有用。我都介紹特別地選擇的商品。請多關照。
    ゴヨウキキ茂助セレクトショップは、ヤマモ味噌醤油醸造元の玄関口に位置しております。これまで様々なお客様から、祝の贈り物等、各種ご依頼をいただきました。それらは、お客様の素直なお気持ちと、熨斗や書を含めた製品の細部に至るまでの綿密な打ち合わせで出来上がっております。この場所は、そのようなお心遣いをかたちにする場でありたいと思い、このたびの開店となりました。
    また、当セレクトショップは、買付、開発、管理を務める、七代目・高橋泰によるところが多数ございます。そのため、高橋が不在の際、不用意に店を構えることをいたしておりません。お手数ですが、当店にご関心をお持ちのお客様は、ご予約を含め、開店の有無をお確かめのうえ、お越しいただきたいと思います。よろしくお願いいたします。
    Goyoukiki Mosuke Select Shop is located in the vestibule leading to the outside of Yamamo Miso and Soy Sauce Brewing Company. Our company obtained the order of various presents from many visitors. They are done in the pile of the fine arrangement with a visitor. I would like to make this place into the place which can do such exchange of opinions. 
    Moreover, there are many places depended on explanation of Yasushi Takahashi, the seventh generation of Mosuke Takahashi which enacts purchase, development, and management. Therefore, a store is not opened when Takahashi is absent. Sorry to trouble you, but those who are interested in a select shop are more sane, and also please come the existence of openings, such as reservation. Thank you for your consideration.

  • 雪空


    かじかむ指先。


    道端の雪だるまに、顔が綻ぶときがある。

    一向に止まぬ雪を、恨めしく思うことがある。

    天候に戸惑い、従い、抗うときがある、雪国。


    帰省した矢先の時分、雪による労働を、
    「生産性がない」のひと言で切り捨てたときがあった。
    地の性をひと言で云うは、なんと愚かなことか。



    まもるもの、すてるもの、

    やるべきこと、やらねばならぬこと。

    そのすべてに人の心が或る。

    だからこの地は紡がれ、いまが或る。



    そう、雪の塊に謂っては、かじかむ指先。

    イテテテテ。





    Snow sky



    The fingertip which is numb with cold. 




    We smile seeing a wayside snowman. 

    We regard as hateful the snow which it does not stop. 

    The people of a snowy country are bewildered by the weather, and follow and resist it. 



    When I went back for the first time, I said snowy work “There is no productivity.” 

    It is foolish to say the characteristic of the area at a word. 



    What is protected. What is thrown away. 

    What should be done. It must do. 

    The all have people’s mind. 

    Therefore, this ground is inherited and there is now. 



    I work by telling a snowy lump such a thing. 

    My fingertip is numb with cold and painful. 








    將要下雪的天空



    凍僵的指尖。




    我們看道旁的雪人微笑。

    我們可憎地想永遠的雪。

    多雪的地方的人們為天氣躊躇，跟隨，反抗。



    我第一次回家時，我把雪的工作稱為了「沒有生產率」。

    用一句話把地域的特性稱為，是愚蠢事。



    守護東西。扔掉東西。

    應該做事。必須做事。

    那個全部有人的心。

    因此這個地被繼承，有現在。



    我對雪的塊兒說那樣的事工作。

    我的指尖凍僵痛。

    続けていくこと、逞しくあること。

    年を新たにし、改めて、社の取り組みを考える。
    ―“外”に向けた動きだけではなく、同時に、“内”に向けた動きも必要である。
    ―そして、それは、“新しいもの”と“古いもの”にも云える。

    It continues muscularly.

    Renewing a year, I consider the measure of a company anew.
    ―The move “outside” towards also requires the move towards “inside” simultaneously.
    ―It can be said to “a new thing” and “an old thing.”

    第五代的本子

    健壮地继续。

    重新做年，我重新，考虑公司的工作。
    ―为”外边”的为活动，同时，为”里面”的活动也需要。
    ―那个，与“新东西”从”旧东西”云也获得。

    これを機に、かつて心に留めた古い帳面を、蔵の奥からひっぱり出した。
    深い黒色や紺色のカヴァーには、金色の社名が施されている。
    所どころ、角は擦り減り、陽に焼かれ、色は褪せている。
    I took out the worried old notebook from the back of the warehouse.
    It is those black with deep one, and a dark blue cover, and the company name is golden.
    Those angles are worn out, can be burned explicitly and are fading.

    我从仓库里头拿出了在意的旧的本子。
    那些之一是深的黑色和藏青色的填补，社名是金色。
    那些的角擦减少，在表面燃烧褪色。

    時化たページには、藍のラフなペン書きや、屋号の朱、
    五代目名入りの印さえ、見受けられた。
    僕の目に、世代を超えたテキストが映る。
    Old Paige had the vermilion of rough indigo pen writing or a shop name.
    I also found the mark of the 5th generation entering noted.
    The notebook beyond the time of unexpected is reflected in my eyes.

    在旧的页上(里)，有蓝色随便的笔式示波器和商号的朱红色。
    我第五代的名的符号也发现了。
    我的眼，显现超越出乎预料的时候的本子。

    五代目を直接知ることはなかった。
    「家業を続けていくこと、逞しくあること。」
    それは不思議と、はっきりと思った、新年。
    僕たちの、新しい年、あたらしい年！
    I do not know the 5th generation directly.
    “Still continue trade muscularly.” 
    I regarded it as wonderful clearly. 
    New year. Our new year!
    我直接不知道第五代。
    「尽管如此，健壮地持续家传的行业的。」
    我与惊奇，清楚考虑那个。
