秋田県味噌醤油工業協同組合の若手の会「若紫」と国際教養大学の有志により、味噌づくり体験・工場見学ツアーを行いました。経営者として直近の仲間となる、地元大学生とのコミュニケーションを図ろう！という企画が実現しました。伝統的な醸造業界に海外の視点を入れたことも、はじめての試みであり、たくさんの方のご協力とお力添えのもと、開催することができました。
About the production classroom of bean paste and factory tour of Wakamurasaki and Akita International University
The meeting “Wakamurasaki” of the youngman of Akita Miso Shoyu Brewer Association and the student of Akita International University performed the production classroom of bean paste, and the factory tour. The plan that communication with a manager and a local university student would be aimed at was realized. It is the first trial to have put the overseas viewpoint into the traditional brewing industry. This event was able to be held by cooperation of many directions.
關於若紫和國際教養大學的醤製作教室·參觀工廠
秋田縣醤醤油工業合作社的青年的會「若紫」和被國際教養大學的學生，進行了醤製作教室·參觀工廠。說打算安排經營者和本地大學生的交流的企劃實現了。到傳統的釀造業界放入海外的視點的，是開始的嘗試。這個活動由於很多的一方的合作能召開。
はじめに小玉醸造さんにご協力をいただき、味噌、醤油、酒蔵の見学をさせていただきました。醸造専門用語を各国の方にお伝えするのは容易なことではなく、同時通訳には予想以上に時間がかかりました。しかしこれが課題であるとともに、文化を超えることの醍醐味だと思いました。
We obtained cooperation in Kodama Brewing first, and were allowed to carry out inspection of bean paste, soy sauce, and sake. It is difficult to tell each country a brewing technical term. Therefore, simultaneous translation took time beyond anticipation. However, I thought that it was the real thrill of exceeding culture while this is a subject.
我們，開始在小玉釀造先生領受合作，請讓我參觀了醤，醤油，日本酒。是為各國傳達釀造專業術語難事。因此同時翻譯超過預想花費了時間。可是我想是這個是課題一同，超越文化的的深奧的妙趣。
野外での昼食は、具沢山野菜の味噌汁に味噌醤油ダレの焼きおにぎり、塩糀漬け肉のバーベキュー。みんなで作業し、みんなで仲良く食べました。そして午後からは、いよいよの味噌づくり体験。午前中に学んだ製造行程を思い浮かべながら、力を込めて味噌を混ぜ合わせていきます。作業の後半には、随分と慣れた手つきになっていました。この味噌づくりの様子を秋田魁新聞とNHKに取り上げていただきました。
The lunch in the outdoors was the miso soup of vegetables, a toasted rice ball of bean paste soy sauce flavor, and a barbecue of miso flavor meat. We worked all together, are everybody and ate on good terms. And we did the production classroom of bean paste from the afternoon. Students mixed bean paste, visualizing the manufacture distance studied during the morning. They were experienced in work in the second half of work. The Akita Sakigake newspaper and NHK covered this production of bean paste.
在野外的午飯，是蔬菜的醤湯和醤醤油味的燒烤飯糰子，醤味肉的野外燒烤餐會。我們以大家工作，靠大家關係很好地吃飯了。並且我們從下午開始，做了醤製作教室。學生們一邊想起前往上午學習製造，一邊混合了醤。他們工作的後半，習慣了工作。秋田魁新聞和NHK採訪了這個醤製作。
最後は男鹿へと移動し、諸井醸造さんで“しょっつる”を主とした見学を行いました。麹による発酵を用いず、塩とハタハタの消化酵素のみで醸成される魚醤の旨味は、植物由来、味噌醤油の私たちとは異なった味わい深さがあり、調味料の世界の広がりを感じました。世界的にも、沿岸地域で見られる有数の魚醤文化に触れることができたのは、貴重な体験であったと思います。
私は今回の活動を通じて、この動きはこれからの味噌醤油業界にとってのひとつの解であるように思いました。それは同業種が繋がり一丸となって目標に向かい、その数により他団体との連携を模索し、単独ではできない動きを見せることができたことです。しかしその根底には「個々の企業が努力する」という強い意志が必要です。その二つを併せ持ちながら社会的な経済活動を続けていくことがこれからの姿であり、そこに参加できたことを嬉しく思いました。このような動きが認知され、地域社会に定着し続けていくことができるよう、弊社も若紫の一員として、努力していきたいと思います。
We moved to Oga and inspected “shottusru” by Moroi brewing. The taste of the shottusru of Moroi brewing is generated by only salt and the digestive enzyme of sandfish not using the fermentation by koji. There is the different taste depth from us of the bean paste soy sauce of vegetable origin. We felt a spread of the world of a seasoning. I think that what the nuoc mam culture of the coastal area was able to be globally touched with was precious experience.
I thought that this was one solution for the future bean paste soy sauce industry through this activity. We of the same industry were collected and it went to the target. It is that groped for cooperation with other organizations according to the scale, and bigger activity was completed. And the strong will that each company tries hard independently is required. Continuing a social economic activity, having these thinks that it is a future figure. I was happy that it has participated there. It is important for such activity to be recognized and to continue being fixed to a community. Our company also wants to try hard as a member of Wakamurasaki.
我們向男鹿移動，由於諸井釀造進行了”shottusru”的參觀。諸井釀造的shottusru的美味，不用由曲子的發酵，以只鹽和雷魚的消化?被生成。與植物來歷的醤醤油的我們有不同的味深度。我們覺得調料的世界的擴展。我想能全世界地觸及的沿岸地區的魚醤文化的，是貴重的體驗。
我通過此次的活動，這個對今後的醤醤油業界來說是為使之一解想。一樣的業界的我們齊整趨向目標的。根據那個規模比摸索，是能大的活動與其他團體的聯合。並且需要各個的公司單獨努力這樣的強的意志。一邊兼有這個們一邊認為繼續社會的經濟活動的，是今後的身姿。我對在那裡參加完成感到高興。這樣的活動被認識，在社區持續安定下來重要。我想敝社作為若紫的一員，也努力。
