納得する工程。
毎年、自分が造りに関して取り組んでいることがある。
今年のそれは、“手作業”で補うこと。
つまり、数種の行程に“手作業”を組み合わせていくという試み。
あるときの研修で、
「いまの醸造は、機械に合わせてしまっている部分がある」と、ある方が仰った。
技術は使い方による。だからそれ以上でも以下でもなく、
丁度いい頃合いを見つけるのが醸造技術者、すなわち杜氏の在り方であると思う。
話を持ち帰り、具体的な方法論を最古参の蔵人に提案した。
すると、「昔はそうやったもんだ」と、ひと言。
その歯切れ良い返事に、新たに作業を加えることを決めた。
今回は半ば自分の独断ではじめたことだが、全く後悔がない。
それは、その工程で、いちいち納得する自分がいるからだ。
いつになっても室（むろ）に臨むと、気持ちを新たにさせられます。長年の経験と技術を培った姿は、僕には醸造の神が宿る社（やしろ）のように見えます。

The technology depends on the usage.
I think that it is what should be of the brewer whose it is a brewing engineer to find a just good condition.
I proposed a concrete method to the oldest warehouse person.
Then, he said, “It was a massage done so in old times”.
I decided the quick answer to add work newly.
I do not regret at all this time though it decides arbitrarily and it began to appear it.
It is because I consent separately it is the process.

「幸い僕のうちは大丈夫でした。被害の大きい沿岸部に向かっています。できれば協力をしてくれませんか？」
とある仕事がきっかけで知り合い、私とは父と子ほどの年が離れていながらも、よくしてくださる宮城の高橋さんから、味噌醤油の要望がありました。同氏の強い想いは、私の胸にも込み上げるものがありました。それは長年に渡り取り組んできた、趣味のクラシックカーによる仙台の活性化と、被災地を救う活動を平行して現状を打破していこうとする強い姿を想像せずにはいられなかったからです。世間には知れ渡らないところで、個人が個人を救う尊い活動がたくさん行われています。被災地の同県でありながら、さらに被害の大きな地域を力強く支えていこうとする高橋さんを、これからも応援していきたいと思いました。同じ東北の私たち、互いに手を取り合い、乗り越えていきましょう。（高橋さんの活動はこちら*で拝見することができます。）
