１５０年を経過する発酵熟成の諸味蔵では、土間に切石を置き、その上に木樽を並べています。蔵は敷地の最も北に位置し、低温発酵を促せるという先人の知恵により役割を果たしてきたものです。しかし、その手入れや管理には頭を悩ませてきました。かつては木樽を職人が現場合わせで増設してきたため、床の高低差が一定ではなく手を入れることが難しいのです。私が家業を継いだ当初は「この土間には着手しないだろう」、そう思っていましたが、近年の国内外の見学者の受け入れを機に、いよいよこの諸味蔵の全面床打ちを決めたのです。

諸味蔵の床打ちは下地づくりの作業量が多く、また、専門の職人による作業の見立ても異なるものでした。蔵元としては、作業者としての蔵人のモチベーションの維持と、異なる判断の中で最適な業者を選定することに苦労をしました。そのために床打ちの実現までには多くの時間を費やし、だからこそようやく完成した床の仕上げは感慨深く、私たちは新たなステージが見えてきた気がします。多くの方にこの諸味蔵をご覧いただきたいと思います。関係者の皆様、ありがとうございました。
