覚悟となる言葉。
いつかの品評会で、先生からいただいた言葉がある。
「醸造技術は何十年もしてやっと向上する。
でも、手を抜くと品質はすぐに落ちてしまうよ、生き物だからね。
だから日々、がんばるんだよ。」
僕は自分が生きているうちに仕込める数を数えている。
これまでのやり方を続けることはもちろんだが、
数が限られていると思うからこそ、新しいことも必ず行う。
歩みはゆっくりでも、このやり方で理想の味に辿りつきたいからだ。
緊張感とこの言葉を胸に、今年も仕込が始まる。

The brewing starts in 2010.
Determined word.
I have been said by the show before by the teacher.
“The brewing technology is done for tens of years and finally improves.
However, the quality is inferior at once when skimping.
Brewing is living thing.
Therefore, you must hold out every day.”
I am counting the number that can be brewed while I am alive.
I keep doing a current way, and do new without fail.
It is because my way wants to reach the taste of the ideal at last by the safe method though is slow.
I think of the tension and this word, and start working this year.
