透き通る米と、笑顔。
「こしき」という機械で、
700kgを越す米を蒸しあげる。
それこそ何度も繰り返している作業だが、
蒸上がりを均一にするのが難しい。
蒸気で次第に透き通っていく米に
浸漬した米を次々と投入していく。
そのタイミングや量の加減を、
状況に応じて変えていくことは
まさしく職人技と思う。
だからこそ、ふっくらと蒸しあがった後に、
互いにふと見合わせる笑顔が忘れられない仕事だ。

It is difficult to even it up in steaming though it is work repeated many times.
Rice with which it soaks it in the rice gradually transparent because of steam is turned on one after another.
It is craftsmanship to change the addition and subtraction of the timing and the amount according to the situation.
Therefore, after steaming rice, the smile to which we are relieved is impressive work.
